With all of the different configurations of add ons out there, the only way to really get it dialed in is on the dyno. They stick some probes up the exhaust and run the bike through the entire range. The probes will record the mix at any given point and let the operator know when to add and take fuel away. The maps (I have the PC V on my bike with the capability to switch between 2 maps) that I am running right now have a - value in the upper throttle range until 3500 RPM, then they run in the +.
