I personally get acknowledged by all the Harley guy's. I have a hard time getting the Goldwing guys to say HI. As some other's have stated, we are all just out havin fun. I'm personally just glad to share the road with everyone....at least the one's on two wheels.
    Dude we are like riding......Sweet

Overhere in the Netherlands we have simaliar handsignals, only in trafficjam, sometimes we use a leg (most of the racers will do that, but in germany often the riders will greet you be leg and not by hand)

Hand moves horizontal by the throat, means problems or "shut off your engine, I'll talk to you" but do that by friends, by a stranger it sometimes will give unpleasant situations LOL

Hand turning roungs above head, means, we start the engines and go

Hand pointing to eye and then to something other, means, look or pay attention
It's not the size that matters

I wave to most, except the vespa type rider. They're not bikers, they're commuters that use the bike only as transport and they aren't even aware of the wave tradition in the bike community. I have never got a wave from a vespa type rider...

If I want to warn a fellow rider for cops, I put one finger in the air and make a circle movement (type impersonating a chopper with my hand).
The helmet tap could also work, but not as commonly known here as far as I know.

Most riders here in the UK nod to each other as they past, its also common to let another biker pull out onto the road in front of you and to stop if you see a biker stopped on the side of the road to see if they are ok. Sadly all these things seem to be done less by younger riders so perhaps these practices will die out.

Interestingly the other night I was coming home from work late and it was dark and wet. I was on isolated road and a sports bike shot passed me and then I saw him halt without warning in a lay-by. I pulled up behind him to see if he was ok, in fact he wanted to make a call so was looking for his mobile phone. He was very young and was both surprised and touched by my actions. So hopefully that's another new rider that will keep the practice up

Since it is mostly my son and i riding on 2 bikes, I keep it simple...
    pointing to gas tank-obvious
    left hand straight up-left turn
    point toward a restaurant-eat here

I wave at all on bikes any size and if they wave back it's all good....

Ha... Done the same thing... Have a neighbor who's a biker of the sport-type, and when I see him pulling into our street, give him the "two-fingers, keep the rubber on the road, be safe" sign... That's about all I ever do, outside of flashing my brights at oncoming traffic in case of LEO ahead....

Here is a link to one of the Signals sets posted on the net. Primarily directed at Group riding. At least in our area, the hazard right is point with right foot, rather than with right hand. There is also one using your left arm in a C pointing to the right, to indicate someone/something on the right shoulder.

Just can't wave at Vespa. NO matter how hard I try to "think" nice about these things and their silverwing/bergman relatives I just cannot. I have finally just desided that this one time I'm gonna allow myself to be bias. I don't have to like em'. See. I did it. Now If I could just keep my eyes from rolling over backwards at the gettup they wear while riding them!!!

Its funny because I used to own a CJ7 and Jeep guys do the wave too. I would hope in the wifes car and get the weirdest looks from guys when i wave to them...oops.

I have a close group of friends that I ride with and we all know each other real well. We use a couple of signials that help us all out.

Drop your inside leg out (MX style) in a turn means gravel on the curve.

open palm down by your side means watch out (could be a cop, deer, etc...)
    I got no jokes...

We noticed that as well on our trip down the Oregon coast earlier this month. Jeep'ers all wave at each other there as well.

As far as bike hand signals, I'll put my left open hand on my helmet mimicing (well, trying) an antler to notify other riders that their are deer ahead. Been doing it for years with my close riding buddies.
I normally signal rocks and crap on the road by pointing down with a foot.

I try to wave at anyone riding by, whether on a motorcycle, scooter, bicycle, combine, riding mower, skate board, etc. I'm just so happy to be out riding.

I think I can tell who usually rides, even when they're in their cage. They wave and acknowledge you on your way by. Mere mortals don't acknowledge a bike, that is, if they even saw there was one there...

Hey, on a side note, I just used all three forms of "there" (their, they're). My english teachers would be proud.

That's the right attitude. I try to do the same when I'm out on the road.

My opinion is that waving to other riders is a nice custom, so I do it. (Two fingers). Showing a little friendliness doesn't hurt.
