Sabrina... These are commom concerns. Having ridden many, many miles in the wet, I can assure you that your bike will handle and turn just fine as long as you are careful and don't do anything abrupt. Be careful braking with the rear brake. Once you unload the rear tire it will lock easily and high-side you. Not to worry if you are aware.
BTW your tires will hydroplane at 9 x square root of tire pressure. So.... if you are running 40 psi in your tires that speed is 9 x 6.325 = 56.92 mph. You were right to feel that your bike was loose at 55mph! Do not be afraid of the wet. We alway pack our rain gear and look at bad weather as just part of the adventure!
