First off, I want to thank all those who gave me advice on removing the valve cover on my zx-11...My next question, I noticed the valve cover gasket is rubber, can it be re-used, or should I buy a new one ?? When using a rubber gasket, is it best to use a gasket sealer/rtv with it ??

It is best to purchase a new one, www.oldbikebarn.com or the dealer.
You will need a small amount of oil safe silicone for the half-moon section of the gasket only. You do not need to apply any other silicone elsewhere on the gasket. Make sure everything is clean.
