Weird Carb Problem

Okay, this is just weird. Cleaned my carbs on Sunday. Put the carbs in, turned it on, ran fine. I have not hooked up throttle cables to handlebar (they are hanging freeley). I came home today (Wedneesday evening), put gas in the bike, and turned it on. Ran great, with full choke it went immediately to 5,000 or more RPMs. I took the choke off IMMEDIATELY almost, just to see what it would do, and it shakily stayed at about 900 RPMs. So this ice cold bike stayed alive with no choke. Very good thing. But then the problem. I put choke back on, to warm it up. Did this for about one minute THEN took choke off, and hapilly pulled the throttle cable. Thing revved up for a half a second, weakly, then went to about 200 RPMs. Put choke on, went full choke to about 3k RPMs, then died. Bike would not start after that. The whole issue happened when I pulled the damn throttle cable. What gives? (1990 750 Ninja)

Updating...

I go to the bike, I put it on full choke, crank it for about 10 times, it starts, just like before, goes to 5,000 RPM. LOUD POPPING FROM EXHAUST, A FEW TIMES. Then, I put it to about half choke, 4,000 RPM. Then, I let it go, and let it warm up, and suddenly, for no reason, goes to 2,000 RPM. Then it dies.

The floats were untouched, when I did the cleaning. The only thing I did was do a quick run through of the bowls, did not touch the floats at all.
