Dude, did you read what you just typed before posting it?

Your idle adjustment is what controls the engine speed with no input from the throttle, or when left untouched.

What did you move??? A setting on the carb??

Spitting and not running very well is a bit vague and you need to provide us with a bit of a baseline so we know where to start with our help.

I could start a list of items but ....

+1

Idle speed screw is out of the loop when the throttle is opened.
Idle mixture adjustment is out of the loop above 1/2 throttle.

Proper idle mixture adjustment is to tweak it for maximum IDLE rpm.

Some carbs have a throttle STOP screw that is longer on some models than on others.

The top speed issue is not the old oil (assuming there is oil in there) and it's not the idle speed screw.

If it's been sitting for months with fuel in the tank and carbs, the carbs probably need to be torn apart and cleaned and the fuel needs to be replaced.

Where it is "supposed to be" is not all the way left OR right.

As far as getting it running right, we just don't have enough information... kinda hard to fix something with a 2,000 mile long screwdriver.

Really suggest you pay someone locally who knows what they're doing.

This gets my vote for post of the year.
If you can get your hands on a machine of that caliber then you may wish to read up on how the machine and it's parts work together.
Turn off the TV one night and read up on it.

What happened to 75mph?

PS
I'd suggest not messing with any carb. settings then, again most of the critical items are internal.
