I generally leave the gas in the carbs but treat the bike with a fuel stabilizer, the theory being that a bike with no gas in the carbs will allow rubber bits in the carburetor to dry out. I dunno if there's any truth to it.
There should be small brass screws on the bottom of the carbs, probably by a nipple for draining the gas. Be VERY CAREFUL to not strip these screws, they're probably hex screws.
