All the symptoms you describe point to a lean condition. Bench sync the carbs next time you have them off. And carb work before a valve clearance check is futile. You need to get yourself a service manual for that bike so you can fully understand the maintenance procedures and specs. If you have any cracked or loose leaking carb holders, vacuum nipples leaking around caps or hose connections can lean an engine out. Improper float bowl fuel level can cause a lean condition.
