OK so I got my bike to start now, but it will only run at 2,000+ rpms.

But my real question is (since I don't have a manual) how much oil do I need and how do I check it, etc. I did not see a dip stick. ???

It is a 1994 ZZR600/ZX6E

Look at the bottom of the engine cover below the oil filler cap. A sight window with 2 marks (min/max) beside it. Get the bike on level ground and hold it vertical and the oil level should be between the 2 marks. If you just shut the engine off, give it a couple of minutes to drain down before checking the oil level. Owners manual should give you info on how much oil but mine also has it in raised letters beside the filler cap.

With an empasis on levelling the bike fore and aft as well as across the beam. On my ZR7S, it is amazingly sensitive to levelling. So centre stand on the garage floor.
