I doubt it would be a problem. I noticed the same on car replacement gaskets. If it bothers you . Use a plastic ball peen hammer, the ball side , and tap lightly along the edge of the coolant passage openings with the gasket held in it's proper position. This will mark exactly the opening size. Turn it over on a clean cutting board and use a razor knife to carefully cut out the extra material.
Gasket makers have been held liable for damage incurred by faulty gaskets so I doubt they'd make them too small to work. These are just my thoughts on this and others may have better suggestions. It's your bike and your labor and of course your choice.
