I have an 03 VN1600 that has been maintained to the letter...
recently took it in for service and after I got off the highway and the
engine idled down, the indicator came on. the oil is in there and when
I throttle up it does go away. Bike also appears to be running hotter
than normal, though there is no indicator there. I did check the sending
unit connection and it is clean and tight.

Any ideas here?

Take the sending unit out and swap it for another one, could be bad sender.

Well here is the answer:

make sure that the tech uses the correct oil filter!!!
Kawasaki had a recall on the filter and associated fittings...the filter part
did change...use the old part and the flow is restricted.
