I'm wondering what purpose the twin exhausts serve, and whether it is possible to convert to a single one

the engines too small to actually need the twin exhausts. there's no reason why it would run happy on a single, like the CBR 4 cylinder 250cc.
but it'd be a pain to convert and not worth it really, i mean you'd have to find someone who can make some nice clean welds and more importantly mandrell bents, not press, to make the headers and run the single pipe. you'd also be better off tuning the lengths so both cylinders have the same lenght of exhaust pipe.

What purpose, dual?
~Symmetry. Beauty. Balance.
~Increased interior surface area = quiet, therefore two mufflers = max flow with min noise.

I heard an EX500 roar by with a 2-into-1 aftermarket and it sounded great to me, but I like my own bikes quiet. And I earnestly appreciate all the other gazelles strapping on belled collars to announce to LEO the lion that dinner's on the way.
The next time you're in San Diego, I owe you a coke.
