I have been using Motul 5100 every 6 months for my oil changes, and of the gallon, I always have a quart left over.... Now I have 2-3 years worth of leftover (not used) oil still in the bottles - can I blend them together and use it at my next oil change?

Correct, 99% of petroleum-based oils are not hydroscopic or hygroscopic (absorbs and/or clings to water) unlike brake fluid (mineral-based) that is...will absorb moisture right through the container (exc. DOT5).
